Rincon Nica has been feeding Hialeah's Nicaraguan community for more than thirty years from a family-run room off West 16th Avenue, minutes from the Palmetto. Gallo pinto is the anchor - rice and beans fried together the Nicaraguan way - alongside carne asada and bistec con pan, all cooked to recipes that haven't needed updating. The doors open at nine in the morning and stay open late into the night, which tells you how the neighborhood uses it: breakfast, lunch and a second dinner. Homeland cooking, three decades deep.
