Rak Dagim sits in the hotel district on Tarshish Street in Eilat, carrying on from HaDayag HaYevani, the Greek fisherman's restaurant that drew pilgrims to the city before the millennium turned. The kitchen is dairy and Italian as much as it is fish: classic ceviche cut with celery, red onion, coriander and chilli; hand-rolled fish cigars with roasted-pepper aioli; fish shawarma seared over tahini with sumac; arayes stuffed with chopped white fish; mushroom risotto with truffle and parmesan; burrata and caprese salads. Oriental fish soup for the traditionalists. Kosher, and comfortable with both halves of its own menu.
