The Eilat branch of a pasta bar that began in 2010 as a single shop in Jerusalem's Mahane Yehuda market. Pasta is made for the chain in Emilia-Romagna and arrives fresh, then gets tossed to order in the pan in front of you — pappardelle, garganelli, gnocchi, ravioli, linguine, corn-flour pasta for those who need it. Garganelli in rose sauce with mushrooms and olives is a standing favourite, and there is pinza, a sourdough flatbread stretched by hand. Kosher, quick, priced for a family. Fresh pasta at food-court speed, without the compromise.
