Half Italian, half Greek, all Red Sea. Varkada takes its name from the dockhands who meet the boats in Greek ports and builds a kosher fish kitchen in Eilat around the idea. Bread comes first: house focaccia with the chef's dips, or a white focaccia under parmesan cream, artichoke, kalamata and truffle oil. Then the water. Ceviche with confit garlic and herbs, white-fish sashimi, red tuna carpaccio, fish and chips in a crisp coat, red mullet with chilli and coriander. Sea-fish arayes in charred pita is the sleeper. Flour from Naples, fish landed that morning.
