A small purple building on SW 32nd Avenue, a serious wine list, and a menu that rewrites itself every couple of weeks — To Be Determined is a Miami wine bar and seasonal kitchen that means the word seasonal. Plates are built for sharing and move with the market: lump crab cavatelli, parmesan scallops, black bass, a pork tomahawk, steak under peppercorn sauce, flan to finish. The room is intimate and casually elevated, the soundtrack good, the service close without hovering. Diners return precisely because they cannot order the same meal twice.
