VIBRA BY JANS – Restaurant

Chef Jans Ramos cooks with a Cuban hand and a Mediterranean vocabulary, and Vibra is where the two meet. Le Cordon Bleu–trained, with nearly two decades behind him and time in kitchens including The Ritz-Carlton and 1 Hotel South Beach, he keeps the list short and confident: a chef's risotto finished with churrasco, picaña off the grill, a loose and soupy arroz de campo meloso. Live music runs through the evening, which is rather the point. Doors open in the late afternoon, Tuesday through Sunday. A small Miami dining room with a serious resume behind the pass.
