A small ramen shop on Narcoossee Road in southeast Orlando, its walls hung with butterflies and photographs of everyone who has finished the house ramen challenge. The bowls rotate every couple of weeks, so the oxtail or the tomato tonkotsu tsuke-men may be on when you arrive; the constants are soy milk tonkotsu, spicy miso, black sesame tantan-men and a vegetarian bowl, with mung bean noodles standing in when gluten is a problem. Start with chicken karaage or the spicy cucumber salad. Diners keep repeating two things: it tastes like Japan, and the staff genuinely look after you.
