Zuru Ramen Bar's Miramar Parkway room is where the group started, and the 18-hour pork bone broth is the reason. The tonkotsu arrives with pork chashu, kikurage, ajitama, menma, beansprouts and nori; the spicy miso layers chilli oil and minced pork over it; a black garlic version brings something darker and sweeter. Around the bowls sit bao buns, gyoza, takoyaki, Korean chicken wings, and karaage or chashu rice bowls. Diners consistently mention heat that is measured rather than punishing and portions that defeat them. Serious ramen, no theatre required.
