Up in the Buda Castle district on Fortuna utca, 21 argues that Hungarian classics deserve technique, not just nostalgia. A Tokaji duck-liver pate opens well. Soups lead: goulash with csipetke, Ujhazi chicken broth, fisherman's soup with hand-cut gyufateszta and carp fillet. Beyond them, chicken paprikash with buttered galuska, veal Wiener schnitzel, mangalica tenderloin, slow-roasted lamb shoulder, veal stew over creamy tarhonya risotto, seared duck liver with kalacs and caramelised figs. Bread comes from the group's own bakery; somloi and ludlab torta close it properly. Open daily from late morning until eleven. Prices match the address, and the cooking earns them.
