On South Palafox in downtown Pensacola, Fosko is a coffee bar that takes its hardware seriously: pour-over built cup by cup, house cold brew on nitro tap, espresso pulled on vintage-style Elektra machines. The kitchen works in crepes, sweet and savory, alongside chorizo buns and pastries, while the FIT frappes give the protein crowd something to order. Later in the day the counter turns into a full cocktail bar. Regulars keep circling back to the honey latte and the Foskolino, and to staff who remember an order. Coffee shop by morning, something looser by night.
