HAMADA MAQLUBA – Restaurant

Named for the dish it stakes everything on: maqluba, the Palestinian pot of spiced rice layered with meat and vegetables and flipped out whole when it reaches the table. The lamb version, ribs falling off the bone, is the one regulars order and then talk about afterwards. Around it sit kabobs, lamb chops and vegetarian plates, all halal, served in a plain warm Tampa room that stays open late every day. Portions run large enough that leftovers are simply assumed. Flip the pot. That is the show.
