La Rosa's kitchen turns out rabo encendido, vaca frita de res with fufu, lechon asado a la cubana, arroz imperial and cordero al vino, then leans modern with Wagyu and Faroe Island salmon from a steakhouse-grade meat program. Flan de la abuelita to close. Nearly six decades in, the room reads warm rather than grand, and diners keep saying the classics taste the way they are supposed to. A Flagami institution that has quietly grown teeth.
