Inside Hadera's Mix complex, Aroma does what it has done since 1994, when two brothers opened Israel's first espresso bar in Jerusalem: coffee from beans roasted in-house, served with a square of chocolate on the side. Breakfast starts early and sandwiches come on the chain's own bread, with halloumi, roasted aubergine and tahini the order most people default to, plus burekas, shakshuka, generous salads and the iced coffee that became a national habit. Shoppers treat it as a landing pad between errands. No reinvention here, just the same cup made the same way every time.
