Aroma in Pardes Hanna-Karkur is the local outpost of the chain two Jerusalem brothers started in 1994, and it keeps to the formula that made it: beans roasted in-house, a square of chocolate with every hot drink, and bread baked for the chain's own sandwiches. Order the halloumi with roasted aubergine and tahini, or fall back on burekas, shakshuka, a generous salad or the iced coffee the brand is known for. It is a morning-coffee and working-laptop sort of room, busy and unfussy. Familiar by design, and that is precisely the appeal.
