Sami Bakikar has held down the old Haifa-Tel Aviv road at the police square in Hadera for years, and it trades on one thing: a professional charcoal grill worked hard, all week, under kosher supervision. Skewers and meats come off the coals, the shawarma has its own following, and a large spread of salads made fresh that morning arrives with bread straight from the oven before anyone has ordered. Families fill the room; groups take the adjoining space for celebrations. Diners talk about the salads and the sheer quantity as much as the grill. Israeli grill, played straight.
