A Paris-minded kosher patisserie that built its following in Brooklyn before opening on Madison Avenue in Lakewood — Cholov Yisroel, dairy, and unapologetically laminated. The counter is a study in butter: classic and specialty croissants, croffles pressed from croissant dough, croissant pizzas finished with truffle oil or margherita basil, and mousse pastries sealed under chocolate shells. Coffee alongside, in a room done in warm light and soft edges to match the pastry. It runs on a bakery's clock, morning into early afternoon, and the best things go first. Come early.
