Zōtō works the izakaya rhythm from a low-lit room on North Cattlemen Road: small plates arriving in waves, skewers off the grill, and a bar built around Japanese whisky. The kitchen sends out curry corn ribs, crisp chicken karaage, garlic edamame, gyoza, wagyu and crab fried rice, a lobster roll, grilled beef skewers, and nigiri and specialty maki from the sushi counter — with a curry panna cotta to close. Guests talk about the polish of the service and the care visible in the plating as much as the fish itself. Sarasota sushi with a cocktail programme that earns its place.
