Dimitri’s Wine Cellar and Restaurant – restaurant

Dimitri opened his cellar in Borjomi in 2017 and still travels the country to make wine alongside other growers before bringing the bottles home to pour. Eleven wines run from a heavy Khashmi Saperavi through Mukuzani and Akhasheni to semi-sweet Ojaleshi, a dry Dzelshavi rose and a light Tsitska-Krakhuna white. A kitchen has grown up around the tastings: cheese and sausage plates, a club sandwich with fries, milkshakes, and a newer restaurant menu of Georgian and European dishes. Seating runs from a bar tucked against the rock face to the yard outside. Visitors keep coming back for the host himself.
