A proper hummusiya in Eilat's industrial quarter, where the chickpeas are sprouted on site and the plate arrives the way it should: hummus, two pitot, pickles and as much heat as you ask for. Beyond the standard there is masabacha, msabaha with ful, hummus with mushrooms, sabich, roasted eggplant and a green falafel that comes out loud with herbs. Shakshuka and vegetable omelettes cover the breakfast end, and you can buy hummus, tahini and lemon-garlic by weight to take home. Unglamorous location, serious plate.
