Breakfast is the hour to find La Union: a bright, plain room in south Miami-Dade where the griddle is already going and the huevos rancheros land before you have properly sat down. Salvadoran cooking is the point. Pupusas revueltas with chicharron, beans and cheese, the simpler bean-and-cheese version, plus soups, seafood plates and a beef soup regulars order in any weather. Prices stay low enough that it reads as a neighbourhood canteen rather than a night out. Calm, clean, unhurried. Go early, and order more pupusas than you think you need.
