A roadside hummusiya on the Hadera bypass of Route 65, tucked into a filling-station stop where the pitas come out of the oven hot enough to steam. The kitchen keeps it deliberately narrow: creamy hummus in several dressings, falafel, fries, shawarma, grilled meats and a spread of fresh salads you help yourself to. Drivers and local families fill the indoor and outdoor tables at midday, and what they mention again and again is the freshness, the generous plates and the unforced warmth of the people behind the counter. Not a destination room. Just the stop you start planning around.
