Netanya has a deep Tripolitanian and Tunisian streak, and Chacho has been a fixture of it since the family's stand in the municipal market. The Yakhin Center room in Poleg carries the same cooking into a proper dining room: kosher, home-style, with big pots of stew kept warm on burners at the pass. Couscous arrives with bean and meat stew; mafrum, osbane and chraime sit alongside meat from the grill. Meals open with a spread of salads, beetroot, fried aubergine, cabbage, carrot, and the garlicky pumpkin chershi people single out. The kitchen runs late midweek, reopening once Shabbat goes out.
