Papi sits at the entrance to Eilat and traces a straight line back to Argentine grilling in Israel: founder Reuven 'Papi' Nachimov opened El Gaucho more than thirty-five years ago, and this is the family's return to that tradition with a modern hand. A butchery runs alongside the dining room. Openers include beef fillet carpaccio, smoked sirloin tataki and Josper-fired focaccia with matbucha and garlic butter; the main event is Holstein beef — entrecote aged fourteen days, sirloin, fillet, and T-bone, porterhouse and tomahawk sold by weight. Sides of mash with pulled asado seal it. Serious meat, served without fuss.
