A.Taj cooks authentic Indian to order in Ramat Yishai, kosher under the local rabbinate, and splits its list three ways: meat, vegetarian, vegan. Starters lead with batata vada, Mumbai's potato balls in spiced chickpea batter, crisp samosas and lentil-flour papad. Mains run to butter chicken tikka in cashew-onion curry, chicken tikka masala with strips of pepper, chicken biryani folded through basmati with cashews and raisins, and vegan malai kofta under a red curry.
