The clay taboon oven at the centre of Gustino was shipped in from Italy, and it sets the terms for everything else. In Ramat Yishai, chef Leon Alkalai's menu heads south — Neapolitan ragù pasta, artichoke pasta, seafood pasta, a shrimp pan, pepperoni and spinach pizzas — built on hand-rolled pasta, fresh mozzarella and good fish. Doors open at noon and stay open to eleven, seven days a week. Southern Italy, transplanted to the Jezreel Valley without much apology.
