Right in the thick of the Carmel Market, stalls pressing in on both sides, a counter frying burika to order. That is the business: a thin pastry parcel of potato and egg, fried until it shatters, folded into pita with tahini and pickled cabbage. Alongside it come spinach pastries, falafel, sabich and Tunisian-style sandwiches — street food built for eating standing up, on HaCarmel Street itself. The queue is part of the deal, and the people in it say the same things: fresh, cheap, worth the wait. Come hungry, take napkins.
