Down one of the old alleys of Haifa's Talpiot Market, past the fish and vegetable stalls, a very small Vietnamese kitchen has been running since 2023. Ron Bram cooks it in the Hanoi street idiom: gio cuon fresh rice rolls, banh bot loc dumplings of rice flour and tapioca filled with crab and shrimp, a sharp green papaya salad with peanuts. Cha ca brings vermicelli, fish, turmeric, pickled red onion and dill, swappable for tofu. Wide chow fun noodles come stir-fried with sprouts and basil. Crisp banh mi baguettes run from tofu to liver pate. The Vietnamese coffee drips slowly.
