Mifgash HaEsh has been burning on Yirmiyahu Street since 1979, and it calls itself the most Jewish restaurant in Jerusalem without much argument from its regulars. The kitchen sits where Jewish home cooking meets a serious grill: health salad with lentils and hot peppers, sliced tongue, individual pastries, chicken breast with rice and dried fruit, salmon fillet baked in filo, and premium cuts over fire. It is mehadrin kosher, and much of the week bends toward Shabbat — pre-orders go out by the trayful before Friday. Three generations of Jerusalemites have a table here.
