Tucked into a corner of Mahane Yehuda at the market's edge, the Levi brothers have been frying falafel to the same recipe for more than forty years - a fixture of the shuk long before the market became a night-time destination. The stall opens at eight in the morning and closes about two hours before Shabbat comes in, which tells you who it is really for: stallholders, shoppers, and the people who have been eating here since childhood. No reinvention, no theatre, no menu to speak of. Just falafel, and a queue that has never really gone away.
