Naji has anchored the centre of Abu Ghosh for years, and its advantage is structural: the meat comes straight from the family's own butcher shop next door. The hummus is what the village is known for and this kitchen is part of the reason, but the table fills quickly around it — siniya, maklubeh, lamb from the oven, a pumpkin-and-tahini salad that is a genuine Palestinian delicacy, and olives from the season's own pressing. For celebrations they will prepare a whole lamb stuffed with rice, pine nuts and meat to order. Halal, generous, and unhurried.
