Chef Chaim Angel's bistro in Beit Shemesh works both sides of the counter: a sit-down room during the week and a Shabbat operation that half the neighbourhood seems to run on. Traditional Ashkenazi cooking anchors the menu - chopped liver most of all - alongside the fuller Shabbat spread, all under strict kashrut supervision. It is a kitchen built for people who want the food to taste like it came out of somebody's home, only better.
