Forrina opened in Karkur in September 2023 when a young pizzaiolo came home from an apprenticeship in Naples, and the room is built around the thing he brought back with him: a hand-made wood-fired oven shipped direct from Naples, taking up most of the space. The dough is an Italian flour blend proofed roughly 48 hours, opened by hand and fired over open flame until the crust is light, airy and properly blistered. There is a short, well-chosen list of Italian starters, a wine list and local craft beers. Mehadrin kosher, on Hamoshav. As close to Naples as Pardes Hanna gets.
