חג׳ כחיל – restaurant

A Jaffa institution in the plural: the Haj Kahil name covers an authentic Arab restaurant, a shawarma counter and a hummus room, all within a few streets of one another. The hummusiya is the honest heart of it, a big, airy, welcoming space with a deliberately short menu of hummus, ful and their variations plus a few plain salads. The hummus comes smooth and mild under olive oil, paprika and cumin; the masabacha is what people actually talk about. Skewers and grilled meats hold up the restaurant side. Old Jaffa, no pretence.
